Jello
I can never make a recipe without singing the little tune J-E-L-L-O! For this recipe I use raspberry flavor, but I think you could switch this out for cherry or even orange and have a great spin on this dish! You don’t want to follow the box recipe, but instead just mix the Jello mix with 1 cup of hot water. Make sure to stir quickly and scrape the sides down with a rubber spatula to get all the granules incorporated.

Ice Cream and Cool Whip
While your mixture is still warm, it’s time to add your ice cream. Any type of vanilla ice cream will work! The ice cream will gradually melt as you stir. Once the ice cream is melted, add the whole container of cool whip. Continue to stir until the mixture is smooth with no lumps. Good luck not licking the spoon after mixing these 2 ingredients! I think I could put this mixture in a cup and drink it! But resist, I promise the final product is worth the wait!

Berries
I like to use a combination of blueberris and raspberries. These two berries have a nice tart that cuts through the sweetness of the parfait perfectly. If you prefer only using one berry that is ok too! Maybe get wild and also throw in some blackberries! Can you believe we are almost to the end of this recipe? I am telling you, this is so easy.

Pie crust
Graham cracker crust is not hard to make, but I am always looking for short cuts to save on time! I never have more than about an hour in the kitchen before I have little feet stomping around and wanting to play! So for me, I buy the premade graham cracker crust. Check out this graham cracker crust recipe if you have the time! Finally Pour your mixture into the 2 pie crusts. If you want to make it fancy, place some berries on the top in a cute design. You can also buy the individual pie crusts and make mini parfaits! Stick the dessert in the fridge for an hour to set! That is it! Can you believe it? Jello Berry Parfait
Equipment
- 1 Large bowl
Ingredients
- 1 box raspberry Jello
- 1 cup water
- 1 cup vanilla ice-cream
- 8 oz cool whip
- 1/2 cup blueberries
- 1/2 cup raspberries
- 2 graham cracker pie crusts
Instructions
- In a large bowl mix 1 box of raspberry Jello with 1 cup of hot water
- Stir until combined with no granulated jello left
- Stir in 1 cup of vanilla ice-cream into the warm Jello mixture
- Add one 8 oz container of cool whip to the Jello/ice-cream mixture
- Stir until smooth with no lumps
- Add berries to the parfait mixture
- Pour into the 2 graham cracker crusts
- add berries to the top for decoration if desired
- Refridgerate for 1 hour and serve!
