Lemon and Caper Shrimp Pasta

If you need a quick and delicious meal that everyone will love, check out this recipe! I can have this on the table in under 20 minutes from start to finish. My kids love anything with noodles and the shrimp is a great source of protein. This dish should be named “Easy peasy lemon squeezy!”

First step is to get your noodles boiling! I won’t bore you with the details on how to do this. If you are not sure on how much time you need to boil the noodles just read the package for a guideline and always taste test for doneness.

If you live on the coast somewhere you may have access to some awesome fresh shrimp, but here in Wyoming, I usually get mine from the frozen section! I usually buy the peeled tale on shrimp because they are the usually the most reasonable for cost, but if you want more time saving, splurge for the peeled and tale off! Over medium heat, melt a half stick of butter and throw your uncooked shrimp in the pan.

You don’t need to wait for the shrimp to cook to start adding your other ingredients! sprinkle the shrimp with lemon pepper, followed by the zest of one lemon. Only zest the very surface of the lemon otherwise you can make the dish taste slightly bitter. Next, cut your 2 lemons in half, remove the seeds and squeeze the juice over your cooking shrimp! If you don’t feel like picking out seeds you can also squeeze the lemon over a strainer into your pan.

Next comes the garlic! If you are still using fresh garlic cloves that you have to peel and chop, do yourself a favor and buy a jar of chopped garlic! You can usually find it in the produce section of your grocery store. I cannot tell a difference in the flavor it adds to the dish and talk about time saving!! Finally add your capers to the dish. Continue to cook until the shrimp are completely pink and firm to the touch. Shrimp cook fast so usually by the time I get all ingredients in the pan, they only need to cook about 2-3 more minutes.

All that is left is to plate your beautiful meal! Start with a serving of your perfectly al dente noodles. Place 7-10 shrimp on top of the noodles and spoon the lemon butter sauce over the dish! Lemon Garlic Shrimp Pasta

Equipment

  • 1 large sauté pan
  • 1 3 qt pan
  • 1 zester

Ingredients
  

  • 2 bags frozen medium shrimp, peeled tail on approximately 30 shrimp
  • 1 package bucatini noodles any noodle will work
  • 1/4 cup butter
  • 1 tsp lemon pepper
  • 2 lemons
  • 1 tsp chopped garlic
  • 2 tsp small capers
  • 1 tbsp parmesan cheese shredded or shaved

Instructions
 

  • Bring water to a boil, add couple pinches of salt to the water
  • Add the whole box of noodles to the water and continue at a rolling boil until noodles are al dente. Approximately 10 min.
  • While the noodles are cooking, place frozen shrimp in a colander and run warm water over them. As they begin to soften, remove the tails.
  • Melt the butter in a sauté pan over medium-low heat and add uncooked shrimp.

  • Add the zest of one lemon and the juice of 2 lemons
  • Add 1 tsp chopped garlic to the saute pan
  • Add 2 tsp of capers and continue to cook over medium-low heat
  • Once the shrimp are fully pink and firm to the touch, remove from heat
  • Place a serving of noodles on the plate, followed by 7-10 shrimp
