This recipe is one that my mom shared with me years ago that I use ALL the time! Not only does my family love these, but these burritos are perfect to take to a family member or friend when they are in need of a meal! These burritos are so easy to make but oh so delicious! It is a perfect combination of sausage, eggs, potato’s and cheese, with the green chili adding a punch of flavor! For the quick details Jump to the recipe, but I will share some details below!

The Eggs
Did you know you can make scrambled eggs in the microwave! I know crazy right?! They are fluffy and perfect for this recipe. Crack your 12 eggs and add your milk into a glass bowl and mix it up well. Then put in the microwave for 2 minutes at a time. After each 2 minutes, mix the eggs. Usually takes between 8-10 minutes total. It is that easy! Fluffy perfection!

The Burrito Mixture
The rest of the burrito filling is honestly so easy that I can cover it in one quick section! Brown your Jimmy Dean pork sausage in a sauté pan until completely cooked and set aside. Next, place your hash browns on a baking sheet and place in the oven and bake according to the package instructions. I don’t ever have the time to defrost the hash browns so mine go directly in the oven still frozen! Finally mix all the ingredients together in a big bowl. Eggs, sausage, hash browns, cheese, stokes green chili with pork and green chiles all in the bowl! I highly recommend the Stokes green chili! It is my all time favorite for this recipe.

The Wrap
In my opinion, your burrito is only as good as your tortilla! If you have never had Tortilla Land uncooked flour tortillas now is the time! They are perfect for burritos, tacos, and quesadillas. They are also my kids favorite quick dessert. Warm, fresh cooked tortilla with butter, cinnamon and sugar! Now back to the breakfast burritos. I like to use the taco size for this recipe and cook the tortilla according to the instructions on a flat top or sauté pan.

Put it all together!
Time to make the burrito! I like to lay out a piece of plastic wrap, set the tortilla on the plastic and scoop about 3/4 cup of the mixture on the middle of the tortilla (pictured below). Then when you wrap the tortilla, you can quickly wrap the burrito in the plastic and keep its shape! This recipe make 12 burritos. I like to keep them in the freezer and pull one out for quick breakfast. Reheating options include the microwave, a saute pan, or the oven!

BEST breakfast burritos
Equipment
- 1 baking sheet
- 1 Large mixing bowl
- 1 saute pan
- 1 large microwave safe bowl
Ingredients
- 12 whole eggs
- 1/2 cup milk
- 16 oz jimmy dean pork sausage
- 4 cups frozen hash browns
- 1 can Stokes pork green chili
- 1 4 oz can mild green chiles
- 8 oz shredded chedder cheese
- 12 ready to cook taco tortillas I prefer tortilla land
Instructions
- spray your baking sheet and place frozen hash browns evenly on pan. Bake according to directions on package.
- Place 12 eggs and 1/2 cup of milk in large glass bowl and mix until yolks are completely incorporated
- Place in the microwave for 2 minute increments, mixing the eggs after each 2 minutes. Usually takes 8-10 minutes to fully cook the scrabbled eggs
- Brown pork sausage over medium heat.
- Combine eggs, sausage, cooked hash browns and mix thoroughly
- Allow to cool, then add the can of green chili, green chiles and shredded cheese and mix thoroughly
- Cook tortillas on sauté pan according to package instructions
- place approx 1/2 to 3/4 cup of filling in the middle of cooked tortilla and roll into a burrito
- Wrap each burrito with plastic wrap if planning for future use
- Keep in freezer until ready to eat
