This soup is delicious and so easy to make! It is my families absolute favorite soup. The best part, I can have it made in about 30 minutes. Another benefit… you only need 1 pot! I always appreciate less dishes. We enjoy this soup in any season of the year, but on a cold winter night this will warm you up from the inside. I will share some tips here, but as always you can jump on down to the recipe for the nitty gritty!
The meat!
This recipe gets a lot of its delicious flavor from the Italian sausage! Having your meat pre-seasoned obviously makes life easier! In your pot, brown your meat thoroughly over medium heat. As the meat cooks, break it into small pieces with your spatula of choice. Sausage always has more fat so once the meat is cooked through, I recommend draining the extra fat off. Now add your chopped onion to the meat and cook until onions are soft. Usually takes about five minutes.

All the goods go in!
This next step is so easy! Continue to keep the pot over medium heat and add in your tomatoes, chicken stock and spinach. You can allow this to simmer over the heat to develop the flavors. I usually let it cook for about 15 minutes but if I am in a hurry I will move right on to the next finishing steps.

Final Ingredients
These next two ingredients you really want to save until 5 minutes before you serve. First you will add in your cheese tortellini! Any kind will do. Recently I used the Rana brand prosciutto & cheese and it was so tasty! Allow the pasta to cook for 4-5 minutes and then stir in your heavy cream right before serving!

Sausage and Tortellini Soup
Equipment
- 1 large sauce pan
Ingredients
- 16 oz Italian Pork Sausage 1lb package
- 1/2 chopped onion
- 1 can steamed diced tomatoes
- 2 cups chopped fresh spinach
- 32 oz chicken stock 1 box
- 10 oz cheese tortellini I like the brand Rana
- 1/2 cup heavy cream
Instructions
- Brown pork sausage in the sauce pan over medium heat. Make sure to cook thoroughly
- Drain off excess fat after cooking and return to pan
- add 1/2 onion and cook until onions are soft, about 5 minutes
- Continue to cook over medium heat
- Add can of diced tomatoes
- Add chicken stock
- Add chopped spinach
- Add cheese tortellini and cook for 4-5 minutes
- Add heavy cream and serve hot!
Can you make this ahead and refrigerate or freeze ?
I dont think it would freeze well with the pasta – but I definitely refrigerate and it is still great!
